Lately the weather in the Midwest has been exceptionally messy. In the last 24 hours, we received a reported, whopping 14 inches of snow. Considering I have a 40 minute commute and the Iowa winds were blowing the snow across all major roadways, I got a snow day! And thank goodness, because all I wanted to do was snuggle up with a fuzzy blanket and my cats and never leave the house. I was so happy to have leftover chili from a crockpot meal I made on Monday, partially because a bowl of chili was so comforting and partially because I would not have made it to the grocery store.
This was not just any chili, but THE best chili I have ever tasted. And no, it is not just because I made it ;). The recipe itself is amazing.
I found the recipe for “The Best Healthy Turkey Chili” by the Ambitious Kitchen on Pinterest. I saved it quickly to my Pinterest board for Crockpot Recipes. In our household, we have switched to lean meats only for cooking, so I was happy to find a turkey chili recipe. I have been trying to focus on a heathy diet lately, and this recipe met my diet criteria.
Here is my LARGE bowl of chili, and of course I did not forget the toppings after the pic was taken. Crackers, cheese, and a little sour cream. Can you tell I’m from Wisconsin with all that extra dairy?
I love this chili simply because it was the most flavorful chili I have ever had. The corn in the chili was like little hidden nuggets of joy. My mouth is watering and my eyes are lighting up just thinking about this deliciousness. Here is a picture of my grocery haul, before I threw it all together.
The original recipe from Monique at the Ambitious Kitchen was meant for the stove-top, but she included notes on how to transform the recipe for your crockpot. I have followed these steps each time I have made this yum recipe, as I prefer the crockpot to save time. Less time cooking = more time at the gym! I would also recommend only 2 tablespoons of chili powder, as mentioned in the recipe notes, unless you like your chili spicy.
In the crockpot version, there is a little stove top prep you must do first, but it is holy quick compared to cooking the full recipe on your stove.
I love coming home to a meal already finished and ready to enjoy when I walk in the door. Bonus points that this one was healthy. I would highly recommend giving this recipe a try.
